Our Favorite Vegan Quick Bread

So we have a favorite recipe for Cinnamon Raisin Quick Bread in our home which is fabulous for vegan friends and family. It is moist, nutritous and delicious. Major thanks to the Post Punk Kitchen for the recipe!

Cinnamon-Raisin Quick Bread

prep time: 10 minutes | cooking time: 50-60 minutes | makes 12 slices

Slice it nice and thick and eat alone, or toasted with margarine or jam or apple butter, and with a cup of tea or after lunch or a light dinner. Enjoy!

Equipment:
loaf pan

Ingredients
1 1/2 cups flour (I used spelt)
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/2 teaspoon cinnamon
1 cup quick oats
3/4 cup brown sugar
3/4 cup raisins
1/4 cup apple juice (I used orange juice)
1 1/4 cup applesauce
1/4 cup vegetable oil
2 tablespoons ground flax mixed with 6 tablespoons water
1/4 cup soymilk or rice milk

Directions
Preheat oven to 350 F.

Grease and flour or spray an 8 1/2″ x 4 & 1/2″ loaf pan. Soak raisins in
apple juice.

In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, oats, and brown sugar. Add applesauce, oil, flax slurry, and soymilk. Stir until just combined. Mix in raisins and juice. Pour batter into
prepared pan. Bake for 50 – 60 minutes, or until a knife comes out clean.

Remove from pan and let cool.

  1. Hey, I just used spelt flour for the first time this week in a light grain blend (1 cup whole grain to 5 cups bread flour) and the kids loved it. This looks like a great bread.
