Tasty Tuesday Series:
Made this for breakfast after a fabulous long run with Erika. Too cold for a green smoothie! This plus some piping hot whole grain toast was just what I needed! Bonus that it was super yummalicious.
Easy Mediterranean Tofu Scramble
1 block mori-nu lite tofu, crumbled
1 C. diced grape tomatoes
1 diced red onion
handful of roughly chopped baby spinach
4 T. nutritional yeast
1 t. spike seasoning
2 minced garlic cloves
1/2 t. ground black pepper
1/4 C. pitted kalamata olives, roughly chopped
Method: Water saute onions and garlic until translucent. Add tofu, veggies, spike and nutritional yeast. Cook just until warmed through. Remove from heat and serve.
I put Blender Salsa on mine….. Oh yeah.
